(Brassica rapa var. chinensis.) Also known as Canton’s Choice, Bok Choi. This widely grown Asian green has smooth green leaves and thick white leaf stalks. It is one of the most popular Asian vegetables and a main ingredient in chow mein and stir-fries. It is also delicious raw. Each plant bears 10-14 erect stalks, 8-10″ long. Grows best in cool weather and can be grown as a spring or fall crop. The slight mustardy flavor of Pak Choi makes it a delightful addition to stir-fries, soups, noodle and meat dishes, and salads, if the young leaves are used. In China, the coarser leaves are often pickled. Some Chinese cooks also dip the leaves in boiling water and hang them out to dry in the sun for several days.
